Dr Manon Mathias

Project Lead (Principal Investigator)

Manon is a Lecturer in French at the University of Glasgow, and is currently undertaking the first study on the gut-mind connection in French culture by looking at links between digestive health and the mind in nineteenth-century novels, gastronomic writing and health manuals.

Dr Elsa Richardson

Project Lead (Co-Investigor)

Elsa holds a Chancellor’s Fellowship in the History of Health and Wellbeing at the Centre for the Social History of Health and Healthcare (CSHHH), University of Strathclyde. Elsa's current research examines histories of nutrition, vegetarianism, other alternative dietary cultures, mental stress and gastric disorders in late nineteenth and early twentieth-century Britain.

Dr Kevin Leomo

Project Administrator

Kevin Leomo is a composer of experimental music and recently completed a practice research PhD at the University of Glasgow.

​

Kevin teaches on a number of Music courses, as well as on the undergraduate Creative Arts & Industries programme, and MSc in Creative Industries & Cultural Policy at the University of Glasgow. He is also the Project Coordinator for The Dear Green Bothy, Collaborations & Cultural Activities Assistant, and Sound Thought Committee Chair.

Kirsty Hendry

Artist

Kirsty Hendry is an artist and facilitator living in Glasgow who develops projects exploring labour, work, and the body.


Selected projects include: Navel Gazing for Collective Gallery’s Satellites 2020 Programme; Reader’s Digest commissioned by Market Gallery Glasgow as part of Reproductive Technologies (2019); Self-Service, publication and events programme in collaboration with Ilona Sagar at Centre for Contemporary Art and GoMA for Glasgow International 2018; So You See Me at Cooper Gallery, Dundee (2017); and Tenderpixel: Futures, ICA, London, UK (2015).


Kirsty has undertaken residencies at The Centre for Contemporary Art, Glasgow and Hospitalfield House, Arbroath. She is also the Learning & Engagement Manager at Glasgow Sculpture Studios.

Dr Laura Freeman

Dr Laura Freeman obtained her Medical Degree from the University of Edinburgh in 2006, completed her vocational training in General Practice in 2011, and spent several years working in Toronto, Canada.

Dr Freeman has developed a strong interest for plant based nutrition and optimising health through lifestyle choices, becoming a diplomat of the International Board for Lifestyle Medicine and a certified CHIP (Complete Health Improvement Program) practitioner in 2019.

Dr Laura Freeman is co-founder and medical director of Plant Based Health Online, the UK’s first CQC registered, online, plant-based lifestyle medicine healthcare service.

Having been around for several years in various capacities, SFYN Scotland are currently in the process of re-building their network in preparation for COP26 and the surrounding events. Following Slow Food's ethos of good, clean and fair food for all, SFYN Scotland look to hone in on the values which speak to them most and then share this with not only Scotland but hopefully further afield. Current co-ordinators include Lyndsay (project coordinator with Scotland the Bread, supporting communities in learning to grow and bake with more nutritious and flavoursome grains) and Lucy (a freelance Graphic Designer producing print and digital collateral for organisations and companies doing good for people and planet).

Dr Rachel Clive

Theatre practitioner and playwright

Dr. Rachel Clive is a theatre practice-based researcher with extensive experience of teaching, arts facilitation  and collaborative playwrighting. Her interest in the Scottish Gut Project is both personal and professional - she is particularly interested in the complex relationships between our guts and our nervous systems, and in how we experience, articulate and perform these relationships in our everyday lives.
